Basic Gluten-Free Pastry

Ingredients

  • 1 cup brown rice flour
  • ½ cup soya flour
  • 1 teaspoon xanthan gum or guar gum
  • 2 tablespoons olive oil
  • cold water to mix

Method

  1. Mix all dry ingredients with the olive oil.
  2. Add water little by little to form the dough. Make sure not to add too much water at one time.
  3. Roll the pastry between two sheets of greaseproof paper. Sprinkle rice flour on the lower sheet and place dough on the second sheet. Flatten with a rolling pin. Then remove pastry from paper and push into shape.
  4. This pastry mix is ideally baked on a 190°C oven.
