Basic Gluten-Free Pastry

Ingredients
- 1 cup brown rice flour
- ½ cup soya flour
- 1 teaspoon xanthan gum or guar gum
- 2 tablespoons olive oil
- cold water to mix
Method
- Mix all dry ingredients with the olive oil.
- Add water little by little to form the dough. Make sure not to
add too much water at one time.
- Roll the pastry between two sheets of greaseproof paper.
Sprinkle rice flour on the lower sheet and place dough on the second
sheet. Flatten with a rolling pin. Then remove pastry from paper and
push into shape.
- This pastry mix is ideally baked on a 190°C oven.
