Kiwi Fruit Salad

The perfect way to end a rich meal is with a refreshing tropical fruit delight.

Preparation Time: 30 minutes plus 2 hours chilling
Yield: 8 servings

Ingredients

  • 1 small pineapple, pealed, cored, and cubed
  • 3 ripe bananas, sliced diagonally
  • 1 cup seedless red grapes
  • 6 pieces kiwi, peeled and sliced
  • 1 cup chopped walnuts

Honey-Yogurt Dressing

  • ½ tablespoon grated orange peel
  • 1 teaspoon rated fresh ginger
  • ¾ cup mayonnaise
  • ¾ cup plain yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice

Method

  1. Combine the fruits in a bowl. Toss gently. Cover and chill.
  2. In a small bowl, combine the ingredients for the dressing.
  3. Just before serving, add the walnuts and dressing to the fruits and toss to blend.
