Kiwi Fruit Salad
The perfect way to end a rich meal is with a refreshing tropical fruit
delight. Preparation Time: 30 minutes plus 2 hours chilling
Yield: 8 servings Ingredients
- 1 small pineapple, pealed, cored, and cubed
- 3 ripe bananas, sliced diagonally
- 1 cup seedless red grapes
- 6 pieces kiwi, peeled and sliced
- 1 cup chopped walnuts
Honey-Yogurt Dressing
- ½ tablespoon grated orange peel
- 1 teaspoon rated fresh ginger
- ¾ cup mayonnaise
- ¾ cup plain yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
Method
- Combine the fruits in a bowl. Toss gently. Cover and chill.
- In a small bowl, combine the ingredients for the dressing.
- Just before serving, add the walnuts and dressing to the fruits and
toss to blend.
