Gluten Free Diet

 

Simple Carrot Cake

Preparation Time: 1 ½ hours
Baking Time: 1 hour
Yield: 1 rectangular cake, 10 to 12 servings

Ingredients

  • 2 cups Gluten-Free Flour Mix
  • 2 teaspoons gluten-free baking soda
  • 2 teaspoons gluten-free baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 4 eggs
  • 2 cups sugar
  • 1 cup canola oil
  • 2 cups grated carrots
  • 1/8 cup chopped walnuts
  • 1/8 cup raisins
  • 1 cup crushed pineapple

Method

  1. Combine flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  2. Beat eggs and sugar at medium speed using electric mixer. Add canola oil in a steady stream, making sure the ingredients are well blended.
  3. Add dry ingredients slowly and continue mixing. Pour in the crushed pineapple, grated carrots, chopped walnuts, and raisins.
  4. Grease and flour 13x9x2 ¼" baking pan. Bake in pre-heated oven at 350◦F for 15 minutes.
  5. Cool cake completely when done.
