Simple Carrot Cake

Yield: 1 rectangular cake, 10 to 12 servings
Ingredients
- 2 cups Gluten-Free Flour Mix
- 2 teaspoons gluten-free baking soda
- 2 teaspoons gluten-free baking powder
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 4 eggs
- 2 cups sugar
- 1 cup canola oil
- 2 cups grated carrots
- 1/8 cup chopped walnuts
- 1/8 cup raisins
- 1 cup crushed pineapple
Method
- Combine flour, baking powder, baking soda, salt, and ground
cinnamon. Set aside.
- Beat eggs and sugar at medium speed using electric mixer. Add
canola oil in a steady stream, making sure the ingredients are well
blended.
- Add dry ingredients slowly and continue mixing. Pour in the
crushed pineapple, grated carrots, chopped walnuts, and raisins.
- Grease and flour 13x9x2 ¼" baking pan. Bake in pre-heated oven
at 350◦F for 15 minutes.
- Cool cake completely when done.
