Apple Pie with Streusel Topping

Yield: 1 8-inch pie
Dough
- 11 tablespoons Gluten-Free Flour Mix
- 2 tablespoons white sugar
- 1 teaspoon salt
- 3 ½ tablespoons butter
- 1 egg yolk
- 2 tablespoons water
Filling
- 6 to 7 apples cored, peeled, and sliced thinly
- 1 teaspoon cinnamon
- ½ cup brown sugar
- ½ teaspoon nutmeg
- juice of half a lemon
- 1 tablespoon cornstarch
Streusel Topping
- 2 tablespoons white sugar
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 10 tablespoons Gluten-Free Flour Mix
- 2 to 3 tablespoons butter
Method
- Prepare the dough: In a bowl, combine the flour, sugar, and
salt. Rub in the butter until the mixture if mealy. Add 1/3 of the
water to the egg yolk then pour into mixture. Mix until you form a
ball or dough. Add the remaining water, if dough is dry. Wrap the
dough in plastic then chill for 20 minutes.
- In a bowl, combine the ingredients for the filling.
- In another bowl, combine the dry ingredients for the streusel.
Rub in the butter.
- Roll out the dough to fit the pie plate. Press to the bottom and
sides of the pan. Fill with apple mixture. Sprinkle with the
Streusel Topping, making sure you cover the entire surface.
- Bake in a 350◦ oven for about 30 to 45 minutes.
